CO2 is very soluble in beer:
- solubility increases with increasing pressure;
- solubility decreases with increasing temperature
Carbonating stones increase the surface area contact with the beer by producing tiny bubbles of CO2 which dissolve more readily in beer than bigger bubbles.
Carbonating stones are generally made of porous stainless steel. It work well for producing curtains of tiny bubbles which are readily absorbed into cold beer.
